| Tofu
balls in spinach sauce - |

| Ingredients: |
- ½ pack Tofu(extra
firm)
- 1 lb. Spinach
- 1 tbsp. Corn Flour
- 1 no. Egg (white only)
- ½ tsp. All spice
powder
- 1 no. Onion (large)
2 nos. Green Chilies
- 1 tbsp. Cilantro(chopped)
- 1 tsp. Fenugreek leaves
(dry)
- 1 tbsp. Vinegar
- ½ tbsp. Red Chili
Powder
- 4 nos. Cloves
- 1 stick Cinnamon
- 2 nos. Cardamom
- 1 pinch Mace
- 1 tsp. Garlic
- 2 tsps. Ginger
- 2 tsps. Dill
- 5 tbsps. Raw Cream
- ¼ tsp. Black Pepper((or
white pepper))
- ½ tsp. Sugar
- 1 tbsp. Butter
- Salt to taste
- Vegetable Oil for frying
- 3 tbsps. Tomato Paste

| Method: |
1. Boil water, add a pinch of salt,
vinegar and vegetable oil. Add spinach
and cook for a minute. Strain and
keep aside to cool.
2. Now make puree of boiled spinach.
Keep aside.
3. Drain tofu and mash it lightly.
4. Combine egg whites, all purpose
flour, corn flour, 1/4 cup chopped
onions, chili, cilantro and salt
to make small balls. You can adjust
the quantity of flour so that it's
easy to form balls.
5. Heat oil in skillet and deep fry
small balls. Set aside on paper towel.
6. Grind 3/4 cup of onions into paste.
7. Heat oil, add fenugreek leaves,
cloves, cinnamon, cardamoms and mace.
Then add onion paste and cook for
3-4 minutes.
8. Add ginger paste, garlic paste,
black (or white) pepper and tomato
puree. Cook for 3-4 minutes. Add
cream.
9. Add spinach puree, red chili powder
and enough water to make thick gravy.
Cook for 4 -5 minutes. Add tofu balls,
sugar and salt as required, cook
for 3-4 minutes again.
10. Add butter and cream on top and
serve hot. |
